My cucumbers in my garden have been growing like crazy! I’ve been trying to come up with new ways to use them, I decided to make a salsa to top on chicken!
Serving size for 2
- Generous amount of garlic salt
- Red Pepper Flakes
- 1 tsp Chili Powder
- Juice of 1 lime
- 2 tbsp olive oil
Put your pieces of chicken in a shallow dish, top with above ingredients. Marinate for 15 mins or more, the longer your marinate the juicier the chicken! Grill the chicken until done, top with cucumber salsa (recipe below).
I searched all over for a good cucumber salsa and all recipes were a little different but they just didn’t sound good, so I wong it. Feel free to adjust the ingredients to your liking.
- 2 medium Cucumbers (skin removed)
- 1 clove garlic
- 1 small jalapeño
- 1 large tomato
- Juice of a half of lime
- Half a packet of salsa spice mix (I get these from my grocery store, you can always use your own spices too)
Dice all of the ingredients. I like to make the salsa chunky so the tomatoes and cucumbers are bigger chunks. But make sure to dice the jalapeño and garlic fine, you don’t want to bite into a big chunk of that! I put all of the ingredients in a Tupperware in the fridge for a little while so the favors could combine.
Pair it with corn on the cob and a side salad with lime juice and olive oil, and you got a delicious healthy meal!
