Homemade Zucchini Bread



I have to admit that I haven't baked in a while hence the slacking on recipe posts. BUT since my husband's garden is doing amazing once again this year and we have so many extra fun ingredients, I decided that today would be a great day to use up some of the zucchini that has been growing like crazy.

OK, maybe I didn't decide it, my husband kind of did. He remembered I did this last year and he also remembered that he loved it so I was begged to make it again and since I kind of like him, I said fine :)

This bread is seriously so easy to make and you can add all kinds of things like walnuts, fruit, chocolate and whatever else you can think of. 

Today I just did the simple recipe so here it is:


Ingredients:
3 cups of all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 large eggs 
1 cup vegetable oil
2 1/2 cups of white sugar
5 teaspoons of vanilla extract
2 cups of grated zucchini

First preheat your oven to 350 degrees F and spray non-stick cooking spray into the loaf pan that you will be using.

Then you are going to mix the dry ingredients: flour, salt, baking soda, baking powder and cinnamon into a medium size bowl.

In a second bowl you will mix your wet ingredients: eggs, oil, sugar and vanilla extract.

Next add the dry bowl to the wet bowl and mix well, then add in your grated zucchini.

Next put into a loaf pan and bake in oven for 60-90 minutes.

And your zucchini bread is DONE! Easy as that!

I love Zucchini bread and I like to introduce it to others by saying its banana bread or something more "normal" because every time I say "Zucchini bread" they say "Ew? Zucchinis?"

Looks good! Just had a question, do you peel the zucchini before grating or just wash and grate the whole thing?

This does sound easy and delicious. I also like adding walnuts to zucchini bread. I bet the 5 teaspoons of vanilla adds a great flavor to this recipe. Thanks for much for sharing. Will have to try this soon.
